做法:春笋切成片(piàn )后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
