做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋(sǔn ),盖(gài )上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖(gài )焖。
