做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
