做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干(gàn )的(de )时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
