做法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
