做(zuò )法:春(chūn )笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
