做(zuò )法:春笋切成片后加少许盐(yán )捞(lāo )出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
