做法:春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
