做法(fǎ ):春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
