做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
