做法:春(chūn )笋切成(chéng )片后加(jiā )少许盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
