做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
