做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖(gài )上锅盖焖。
