做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
