做法:春(chūn )笋切成片(piàn )后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的(de )时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
