做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
