做(zuò )法:春(chūn )笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
