做法:春笋切成(chéng )片(piàn )后(hòu )加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时盖上锅盖(gài )焖(mèn )。
