做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖(gài )大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时(shí )盖上锅盖(gài )焖。
