做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
