做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖(mèn )。
