做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖(gài )上(shàng )锅(guō )盖焖。
