做法:春(chūn )笋切成(chéng )片后(hòu )加(jiā )少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
