做法:春(chūn )笋切(qiē )成片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
