做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
