做法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
