做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖。
