做(zuò )法:春(chūn )笋(sǔn )切成片(piàn )后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放(fàng )入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
