做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加(jiā )入(rù )少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖(gài )上锅盖焖。
