做法:春笋切成片(piàn )后(hòu )加(jiā )少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
