做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖(mèn )。
