做法:春笋切成(chéng )片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快(kuài )熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
