做(zuò )法(fǎ ):春(chūn )笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
