做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖(gài )焖。
