做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖(gài )上(shàng )锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖(gài )上锅盖焖。
