做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
