做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
