做法(fǎ ):春(chūn )笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
