做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
