做(zuò )法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加(jiā )入盐(yán ),翻(fān )炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖焖。
