做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
