做法:春(chūn )笋切成片后加少许(xǔ )盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
