做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮到水快(kuài )熬(áo )干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖焖。
