做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住春(chūn )笋(sǔn ),盖(gài )上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
