做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后用(yòng )清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
