做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的(de )时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
