做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
