做法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒1分钟左(zuǒ )右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀(yún ),加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
