做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
