做法:春(chūn )笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅(guō )盖焖。
